Bacon egg cups
Kids will love these bacon egg cups.

6 slices wholemeal bread

12 rashers middle bacon, rind removed

12 eggs

3 tbsp olive oil

12 cup muffin tin

Lightly coat your muffin tin with a little oil.

Cut out 12 rounds of bread and place them in the bottom of the muffin cups. You should get 2 rounds out of one slice of bread.

Preheat oven to 180°C/gas mark 6.

Place a tbsp of oil into a frying pan on a medium heat and gently cook the rashers for about 3 minutes on each side.

Remove the round piece from each rasher. Don't throw it away as you can use it in another recipe later on.

Line the edge of the muffin cups with the rashers, just inside the bread.

Crack an egg into each one so that it is inside the bacon and on top of the bread

Bake in the oven for 15 minutes or until the eggs are set.
