Baked apple date and custard pots

650g cooking apples, peeled cored and sliced

150g golden caster sugar

6 dates chopped roughly

5 egg yolks

500ml Avonmore Fresh Cream

Pinch cinnamon

Place the apples with 100g sugar in a medium saucepan. Cover and cook over a low heat for 15-20 mins until they are soft enough to mash with a spoon.

Add the chopped dates. Divide between 6 ramekins.

Heat the oven to 160deg c. Whisk the egg yolks and remaining sugar together in a medium sized bowl. 

Heat the cream in a small saucepan. Just before it comes to the boil, whisk in the egg and sugar. It should thicken slightly. Strain into a jug. Add the cinnamon and stir.

Pour the custard over the apple. Place the ramekins in a roasting dish with warm water coming two thirds up and bake for one hour until set. Serve at room temperature.
