Baked cheesecake with blueberries

75g butter, melted, plus extra for greasing

175g digestive biscuits

175g blueberries, plus extra for decorating

450g cream cheese

150g caster sugar

1 tsp vanilla extract

4 eggs, lightly beaten

Icing sugar, to dust

Heat the oven to 180°C. Grease a 24cm cake tin.

In a food processor, process the biscuits into crumbs. Combine with the melted butter.

Spread into the tin, pressing down to form a crust. Cover with the blueberries then set aside in the fridge.

Whisk together the cream cheese, sugar, vanilla extract and eggs until smooth. Tip over the blueberries.

Put in the oven for about 40 minutes until light gold and soft.

Take out of the oven and set aside for about 10 to 15 minutes.

Carefully move the cheesecake out of the tin and onto a serving plate. Scatter a few blueberries on top and powder with icing sugar.

Slice before serving
