Baked eggs in a tomato sauce

Baked eggs in a tomato sauce
This is recipe is so versatile and you can use up any veggies leftover in your fridge.
 

8 eggs

50g mushrooms, finely sliced

2 tsp rosemary, extra to garnish

Salt and pepper, to season

250g tomato sauce

60g mozzarella cheese, grated

1 red pepper, sliced

Preheat oven to 180°C or gas mark 5.

Whisk the eggs together in a bowl. Add in your rosemary and mushrooms and mix together.

Pour the tomato sauce into a lasagne dish or ovenproof dish. Place the peppers on top of the sauce. Sprinkle the cheese on top.

Pour the egg mixture over your peppers and sauce. Season with salt and pepper.

Place in the oven for 15 minutes or until the eggs are cooked and the cheese is melted.

Served with a salad or on tomato bread.
