Banana and Berry Muffins

Banana and Berry Muffins
These muffins are a big hit in our house, and the kids really enjoy getting involved in making them. 
 

125g mixed berries
2 bananas, mashed
125g plain flour
75g wholemeal flour
200g rolled oats
75g brown sugar
250ml milk
2 large eggs
3 tbsp sunflower oil
3 tsps baking powder
1 tsp cinnamon
1 tsp salt

Preheat the oven to 200. Grease a muffin tray or line with paper cases.

Combine the flour, rolled oats, baking powder, cinnamon, salt and sugar.

Mix the sunflower oil, eggs and milk in a separate bowl. Make a well in the dry ingredients and combine with the wet ingredients.

Fold in your mashed banana and berries until everything is mixed evenly.

Divide the mixture into the muffin tray and place in the oven for 20-25 minutes until golden and cooked through.

Storage
Muffins will last for 4-5 days if stored in an airtight container such as our 24oz MummyCooks Portion pot.
They are also perfect for freezing. Make sure to make double the quantity so you have some on hand for a snack or breakfast on the go!
