Bean, courgette and mint dip

Lovely vibrant multi layered flavours in this delicious dip. Perfect served with breads, crackers or tortillas.
2 tbsp olive oil
1 courgette, finely chopped
2 garlic cloves, chopped
400g tin cannellini beans, drained
Juice ½ lemon
170g light Greek style yoghurt
2 tbsp chopped mint
Heat the oil in a pan and fry the courgettes and garlic with some salt and pepper until the courgettes are tender.
Tip the courgettes into a bowl with the beans, lemon juice, yoghurt and mint.
Blitz until smooth using a food processor then spoon into a jug or bowl and serve with crudité, crackers, flat breads or anything you like.
