Beef casserole

This is a very easy to prepare beef casserole and it tastes great. The beef should be really tender too.
2 tsp vegetable oil
2 tbsp flour
½ tsp salt and pepper
1 tsp paprika
700g stewing steak, cubed
2 red peppers (approx 250g), sliced into 5 cm strips
2 cloves garlic, chopped and crushed
3 sprigs of rosemary
2 medium onions, thinly sliced
2 tbsp tomato paste
450ml warm water
150g button mushrooms, sliced (optional)
150g frozen peas
Zest of one lemon
1 tbsp chopped parsley
Preheat the oven to 180°C/°C/350°F/Gas Mark 4. Pour the oil to a large ovenproof dish with a lid.
Combine the flour, salt, pepper and paprika together in the ovenproof dish and toss the cubes of beef in as well.
Make sure the mixture is well combined covered.
Add the red pepper, garlic, rosemary and onion.
Mix the tomato paste and water in a small bowl and then pour over meat and vegetables until just covering.
Cover and cook in the oven for 2 hours.
Twenty minutes before the end of the cooking time, add the mushrooms and peas - take the opportunity to check seasoning and add salt or pepper as required. Just before serving, remove the sprigs of rosemary. Then mix lemon zest and parsley together and mix through the casserole.
Serve with mashed potatoes or, if you like, crispy garlic bread.
