Beer-battered cajun fries

Crispy delicous beer battered fries.
1kg potatoes
260g plain flour
1 tbsp Cajun spice
2 tsp garlic salt
2 tsp onion powder
2 tsp paprika
2 tsp salt
1 tsp ground black pepper
2 x 330ml bottles of Amstel Radler beer
Sunflower oil for frying
Peel and cut the potatoes into thin sticks.
Soak the potatoes in cold water for at least 1 hour (or
up to 8 hours) to remove the starch.
Mix the flour, spices and beer to create a thick batter.
Drain the chipped potatoes and add them to the batter, mixing well to coat each piece of potato.
Heat the oil in a chip pan to a high heat.
Cook the chipped potatoes in 3/4 batches cooking until they are golden and cooked through.
This can take anywhere from 4 - 6 minutes.
You can use tongs to gently separate the fries while they are cooking.
Remove the fries from the oil and allow them to drain on a paper towel-lined plate while finishing
the remaining batches.
Serve immediately.
