Beetroot hummus

Beetroot can be made into a lovely dip for flat breads or crackers.
4 beetroot, cooked, keeping a little back as garnish (optiona)
1 garlic clove, roughly chopped
2 tsp ground cumin
2 tbsp pomegranate juice, plus extra to drizzle
1 tbsp tahini
Juice of 1 lemon
Use a food processor to blitz all the ingredients until smooth.
Season with salt and pepper and add a little more lemon juice to taste if needed.
Spoon into a serving bowl.
Drizzle with pomegranate juice and a little chopped beetroot if you like.
