Berry  and oat muffins
Berries are one of nature’s elixirs. These muffins are packed with vitamin C and oats which give energy and a healthy dose of fibre.
 
 

Vegetable oil cooking spray

55g self-raising flour
80g traditional oats
100g firmly packed brown sugar
75g butter, melted
1 egg
235ml milk
1 punnet of fresh mixed berries, pre-frozen

Preheat the oven to 180°C / 350°F / Gas mark 4.

Prepare a 12 whole muffin tray with a light spray of cooking oil

Sift the flour into a mixing bowl.

Stir through the oats and sugar.

Add in the butter and mix well.

Whisk the egg and combine with the milk, then pour through the dry ingredients.

Stir through the mixed pre-frozen berries.

Divide evenly between your muffin holes and bake for 30 minutes or until springy.
