Berry cheesecake trifle

A spin on the trifle with these berry cheesecake delights.
300g mixed berries
2 tbsp golden caster sugar
1 ½ lemon, finely grated zest and juice
8 gingernut biscuits, crushed
Knob of butter, melted
4tbsp icing sugar
250g mascarpone or ricotta
Add the mixed berries, caster sugar and 2 tablespoons of the lemon juice in a pan.
Heat on low for 3-4 minutes or until the berries start to burst. Leave to cool.
Meanwhile, mix together the crushed biscuits and melted butter until well combined.
Spoon into glasses.
Fold the rest of the lemon juice, lemon zest and icing sugar into the mascarpone or ricotta.
Divide the cheese mix between the glasses, then spoon over the berries and their syrupy juices.
