Boozy toffee sauce

The sherry and brandy perfectly balance the sweet and creamy toffee for a sophisticated taste
110g butter
220g light brown sugar
220ml double cream
60ml brandy
60ml sweet sherry
Pour the cream, butter and sugar into a saucepan. Bring to the boil while stirring continuously.
Boil until the sauce has a thick consistency, which should take about 4 minutes.
Take the pan off the heat. Let the sauce cool for about 1 minute then add both the brandy and the sweet sherry.
This sauce is a perfect fit for Christmas puddings.
