Rum or brandy butter
This alcohol-flavoured butter will add another festive note to your Christmas table
 

450g unsalted butter

220g light brown sugar

1 tsp finely grated lemon zest

2 tsp finely grated orange zest

1 tsp lemon juice

1 pinch ground nutmeg

1 pinch ground cinnamon

6 tbsp dark rum or brandy

•         Soften the butter until it turns white and becomes light in texture, then beat in the sugar.

•         Add the lemon juice, zest, cinnamon and nutmeg. Blend in well.

•         Pour in the rum (or brandy) one drop at a time while beating constantly.

•         Place this butter in a plastic box and store it in the fridge until it hardens. Two hours before serving, take the butter from the fridge and let it soften at room temperature. Use a fork to give it a more frothy texture and enjoy.
