Braised fennel
Fennel has a sweet flavour and this braised recipe is delicious and goes perfect with a Sunday roast.

2 large fennel bulbs, rinsed clean

2 tbsp butter

Pinch salt

1 tsp sugar

150g vegetable stock

120ml cup water

1 tsp orange juice

Freshly ground black pepper

Fresh parsley to serve

Slice the fennel bulbs in half and then into quarter leaving a lot of the stem on.

Heat the butter in a saucepan over a medium to high heat. Add the fennel and cook for about 4 minutes.

Add the salt and the sugar. Cook until they are just turning brown.

Pour in the stock and bring to the boil. Reduce the temperature and allow it simmer for about 10 minutes.

Add the orange juice and leave to simmer until most of the stock has been absorbed.

Remove the fennels and put into a serving bowl. Spoon over a little of the stock and season with the black pepper.

Garnish with the parsley before serving.
