Brie and asparagus frittata
Creamy, brie with crisp asparagus melted together into a delicious frittata in minutes, an ideal family supper or lunch.
 

2 tbsp olive oil

8 spring onions, finely sliced

Handful mint leaves, chopped

200g brie, sliced

2 bunches fresh asparagus, trimmed and cut into small pieces

8 eggs, beaten

Crusty bread, to serve

Preheat the grill.

Pour the oil into a frying pan and place over a medium heat.

Stir the asparagus, mint and spring onions into the eggs with a little salt and pepper and pour into the hot pan.

Cook for 3-4 minutes, moving the egg around a bit to ensure it is almost cooked.

Top the mixture with the sliced brie and then put the pan under the grill for 4 minutes, until the cheese melts and the edges are golden.

Serve with crusty bread, if you like.
