Brioche french toast with blueberry compote
This is a really heavenly recipe for brunch.

For blueberry compote:

100g blueberries

1 tbsp caster sugar

A squeeze of lemon juice

Frech toast:

2 eggs

4 tbsp milk

1 tbsp caster sugar

A drop of bvanilla extract

4 slices of thick brioche

Butter, for frying

Vanilla ice-cream, to serve

To make the compote cook the blueberries on a gently heat until they begin to ooze. Add the caster sugar and lemon and simmer for 2-3 minutes until they form a jam.  

For the French toast, combine the eggs, milk, sugar and vanilla extract until the sugar has melted.

Dunk the bread in the egg mixture, ensuring it is thoroughly coated.

Fry slices of the bread in the butter until golden brown on both sides.

Serve with a scoop of vanilla ice cream, if desired and a generous dollop of blueberry compote.
