Broccoli and lemon couscous
Broccoli is full of vitamins and nutrients making this dish particularly healthy and nutritious, not to mention easy to make and delicious. 
 

1 tbsp olive oil

1 head of broccoli, cut into florets

110g vegetable stock

185g couscous

1 tsp lemon juice

Pinch salt and pepper

100g pasta optional

1/2 teaspoon dried basil

Cook the pasta according to packet instructions. Set aside.

Heat the oil in a saucepan and cook your broccoli until tender.

Pour in your vegetable stock and add the couscous. Bring to the boil before allowing to simmer for about 10 minutes or until the stock is absorbed.

Pour in the lemon juice and mix it well. Season with salt and pepper and spoon into a serving dish.

Add the pasta and serve.
