Brussels sprouts with flaked almonds and lemon zest

3 tbsp olive oil

1 tbsp Goodall’s shallot paste

16 large Brussels sprouts, trimmed and halved

50g toasted, flaked almonds

2 tbsp fresh lemon juice

2tsp grated lemon zest

Salt and Goodall’s black pepper, to taste

Parboil brussels sprouts for 2 minutes.

Pour out the hot water and place the brussels sprouts immediately in cold water and then drain the water.

Leave the next step until just about to serve.

Heat oil in a large non-stick pan over medium-high heat.

Add the shallot paste and stir for about 30 seconds.

Add Brussels sprouts, toasted, flaked almonds and lemon zest and sauté for about 3 minutes until the Brussels sprouts have softened.

Drizzle with lemon juice, season to taste with salt and pepper and serve immediately.
