Butterscotch self saucing pudding
This is a really easy recipe to make and it tastes great. 

Preheat the oven to 180°C/350°F/Gas 4. Lightly grease a 1 litre ovenproof dish with butter.

Mix the flour, sugar and baking powder in a large mixing bowl. Mix well to combine all ingredients.

Add the egg, butter, milk, golden syrup and vanilla extract and stir well.

Pour the mixture into the prepared dish.

To make the sauce:

Combine the cornflour and sugar in a bowl then sprinkle over cake mixture.

Dissolve the golden syrup in the hot water and pour over top - it's best to pour it in a spiral pattern from the centre of the cake out.

Bake in the oven for 35-40 minutes - the top of the pudding will look cooked and golden.

The sauce is very hot when cooked so allow it stand for 5 minutes to avoid burning your tongue.

Dust with icing sugar if desired and serve with ice cream or freshly whipped cream.

This dessert works as a gluten free option also - simply substitute the ordinary flour for gluten free flour.
