A Caesar salad is a great side dish or starter. Add chicken to the recipe if you want to have it for lunch or dinner.
2 ciabattas, cut into cubes
3 tbsp olive oil
Cracked black pepper, to season
1 garlic clove, crushed
2 anchovies from a tin, mashed
Handful mozzarella cheese, grated
5 tbsp mayonnaise
1 tbsp white wine vinegar
1 large head of lettuce, wash and clean the leaves
100g parmesan shavings
Heat oven to 200°C/ 400°F/ gas mark 6. Line a baking tray with parchment paper.
Spread the ciabatta pieces onto your baking tray and sprinkle over 2 tbsp olive oil and cracked black pepper.
Place in the oven for 10 minutes until crunchy. Remove and set aside.
In a small bowl, combine the garlic, anchovies, mayonnaise, mozzarella and vinegar
Blend with a handheld blender. It should have a smooth, creamy consistency.
If it is too thick, add a little water.
Toss the lettuce into a serving bowl and put the croutons on top.
Sprinkle the dressing on top and finish with the pamesan shavings.
