California turkey rolls
These compact rolls made of turkey, cheese, salsa and lettuce are sure to put a smile on your child’s face when they open their lunchbox.

1 small avocado

1 large vine ripened tomato, seeds removed, chopped well

1 tsp lemon juice

1 flour tortilla

2 tbsp mayonnaise

2 slices good quality turkey

2 tbsp butter or lambs lettuce, shredded

1 slice cheddar cheese, cut into strips

¾ carrot, peeled then thinly sliced into matchsticks

Cut the avocado in half, remove the stone then scoop out the flesh with a spoon.

In a bowl, combine the avocado, tomato and lemon juice. Mash and mix well then set aside.

Spread the tortilla with mayonnaise

Add the avocado mixture and top with the lettuce.

Place the turkey on top, leaving room on the edge for rolling.

Add cheese strips and carrot down the middle then carefully roll the tortilla into a wrap.

Cut into sushi style pieces.
