Carribean fish stew

Carribean fish stew
Spiced fish stew which is delicious and easy to prepare.

Spice paste:

1 tbsp fresh ginger

3 spring onions, sliced

3 garlic cloves, diced

1 celery stalk, chopped

1 red pepper, sliced

1 red chilli, sliced

Bunch of fresh coriander leaves, chopped

Fish:

600g white fish, cut into large chunks

1 tbsp vegetable oil

1 yellow pepper, deseeded and sliced

300ml coconut milk

Juice of 2 limes

Salt and pepper

Blend together all of the spice paste ingredients in a food processor.

Toss the fish in half of the paste and chill for 30 minutes to marinate.

Heat a pan with oil, addding the remaining spice paste and dry for 2 minutes.

Add the red pepper and cook until softened, then add the fish and saute gently. Pour over the coconut milk, bring to the boil, then turn down the heat and simmer for 5 minutes until the fish is cooked through.

Season with salt, pepper and a squeeze of lime just before serving.

Serve with rice.
