Carrot and orange muffins
Fancy doing some baking with the kids today? Why not have a go at these tasty healthy carrot and orange muffins x

100g caster sugar

300g plain flour

2 tsp baking powder

1 tsp cinnamon

2 medium oranges, juiced and zested

1 egg, beaten

80g butter, melted

100g carrots, peeled and grated

Preheat the oven to 190°C/375°F/gas 5. Line a 12-hole muffin tin with muffin cases.

Combine the caster sugar, flour, baking powder and cinnamon together in a large bowl.

Mix together the oranges, egg, melted butter and carrots with a whisk and stir loosely into the flour mixture.

Divide evenly between the muffin cases and bake for 20-25 minutes until risen.

Leave to cool before serving.
