Carrot loaf cake

200g self-raising flour
260g castor sugar
1 ½ tsp baking powder
55g mixed chopped nuts
2 tsp ground cinnamon
2 tsp ground ginger
50g raisins
225g light olive oil
225g grated carrot
3 eggs
2 tsp vanilla extract
Sift flour into a bowl and mix with the rest of the dry ingredients. Add the olive oil and grated carrot and stir.
Add the eggs one at a time and stir. Finally add the vanilla extract and stir once more. Pour the mixture into your tin and spread it evenly.
Bake in the oven for 1hr-15 minutes at 180°C/350°F/Gas 4.
Stick a skewer into the centre, if it comes out clean the cake is cooked, if not put it back into the oven for intervals of 5 minutes.
Cool before removing from tin, and decorate as you wish, we top our carrot cake with cream cheese icing.
