Cauliflower gratin
A tasty and healthy side dish!

1 head of cauliflower

30g butter

30g flour

400ml chicken or vegetable stock, hot

100g grated cheddar or mozzarella

1/4 tsp nutmeg

Salt and pepper

Wash the cauliflower and cut it into florets. Place them in a steam basket and cook for about 10 minutes. 

Meanwhile, prepare the white sauce. Melt the butter in a saucepan, add the flour and mix well. Then, gradually add the stock, whisking continuously to prevent lumps. Add salt, pepper, nutmeg and cook until the sauce has thickened. 

Preheat the oven to 200°C. Place the cauliflower florets into a rectangular baking dish. Roughly cut them to create an even surface, then pour the sauce. Scatter with grated cheese and bake for about 30 minutes.
