Chapattis
These Indian flatbreads are perfect served with your favourite curry or just slathered in delicious chutney
250g plain flour, sieved
1 tsp salt
2 tbsp olive oil
140ml water
3 tbsp oil, for frying
In a large mixing bowl, pour the flour, salt and oil. Add enough water to form a dough. It should be soft and non-sticky.
Work the dough for about 2 to 3 minutes until it becomes smooth. Shape into a ball.
Divide into balls the size of a walnut. Lightly flour your work surface then flatten each ball into a 15cm circle.
Pour 1 tablespoon of oil into a frying pan and set over medium heat. Fry the chapattis, one by one, until they turn golden on each side.
Add a bit more oil if necessary. Wrap the chapattis with tin foil. Set aside, keeping them warm.
