Cheese and spinach parcels

Cheese and spinach parcels
An impressive starter to your meal for two.
 

110g fresh spinach, washed

½ tbsp groundnut oil

1 small shallot, finely diced

15g walnuts or pine nuts, roughly chopped

50g vegetarian cheddar, grated

Pinch freshly grated nutmeg

1 tbsp double cream

½ tsp walnut oil

1 tsp butter, melted

6 squares filo pastry, each measuring 16cm x 16cm

Preheat the oven to 190°C / 375°F / Gas mark 5.

Line a baking tray with greaseproof paper and set aside.

Place the spinach in a pan and stir over a high heat until wilted.

Strain and squeeze out the liquid, then roughly chop.

Heat the oil in a frying pan and fry the shallot until softened.

Add the walnuts, and cook for 2-3 mins.

Remove from heat, stir in the spinach, cheese, nutmeg, cream, salt and pepper.

Mix the walnut oil with butter.

Brush a thin coating on a piece of pastry.

Place another piece on top with corners at a different angle, brush with the butter and repeat with one more piece.

Dollop a spoonful of the spinach mixture in the centre, bringing up the corners of the pastry and pinch in the middle to form a parcel.

Repeat to make remaining parcels, then transfer the baking tray.

Brush the parcels with remaining butter and oil.

Bake for 20 minutes until golden then serve.
