Cheesy courgette boats

This is an excellent recipe if you want to spruce up a boring courgette. It's also a handy replacement for heavy carbs in a meal.
3 courgettes
Olive oil
1 small red onion
3 plum tomatoes
2 slices of wholemeal bread, crumbed
1 garlic clove, minced
1 tsp dill
Salt
3 handfuls of smoked cheddar, grated
Preheat the oven to 190C/ 375F/ gas mark 5
Cut the courgettes in half lengthwise and scoop out the insides. Keep these to one side.
Brush the courgettes with olive oil and place in the oven for 20 minutes.
While these bake, warm some oil in frying pan over medium heat. Finely chop your onion and sauté until softened.
Chop the courgettes’ insides and add these to the pan. Continue to cook until soft.
Chop the tomatoes into medium cubes and mix these in a bowl with the breadcrumbs, minced garlic and dill. Season with salt to taste.
Once this is thoroughly combined, add the courgette mixture and mix together.
Divide the filling between the courgette shells, sprinkle the cheese on top and put in the oven for about 15mins or until the cheese is melted and golden.
