Chestnut and sausage stuffing

450g/1lb sausage meat

200g/8oz chestnut purée

400g/14 oz whole cooked chestnuts

2 onions, finely diced

2 garlic cloves, crushed

1 tbsp fresh parsley, chopped

1 tsp salt

1 tsp black pepper, freshly ground

In a large bowl mix together the sausage meat, chestnuts, chestnut purée and the chopped parsley. Season with salt and pepper. Add the finely diced onions and garlic and using your hands combine all the ingredients together.

Place the stuffing in the cavity of the turkey and cook as per the stuffed turkey cooking instructions or alternatively place in a baking tin, cover with foil and cook for 25–30 minutes. Serve immediately.
