Sausage and cranberry stuffing with chestnuts

This stuffing will be the star of your Christmas table
1 onion, finely chopped
50g butter
300g sausage meat
175g fresh white breadcrumbs
2 tbsp chopped fresh mixed herbs (parsley, sage, rosemary & thyme)
100g vac-packed chestnuts, chopped
50g dried cranberries
Preheat the oven to 190°C.
Sauté the onion in butter until soft.
Mix in the rest of the ingredients & season with salt & pepper. Shape into a large roll & wrap in a layer of parchment paper & tin foil, twisting the ends securely to seal. Cook for 45 mins until firm.
Unwrap & cut into slices, then garnish with kumquats & bay leaves to serve, if preferred.
