A simple chicken and bean dish that is delicious, low in fat and high in protein.
500g (4 x chicken legs or drum sticks)
2 tbsp olive oil, plus a little for frying
400g tin mixed beans, drained and rinsed
400g tin kidney beans, drained and rinsed
400g tin chopped tomatoes
1 onion, chopped
2 garlic cloves, crushed
3 tbsp thyme, roughly chopped (dry is fine)
3 tbsp parsley roughly chopped (dry is fine)
1 x lemon, zest and juice
Preheat the oven to 180°C / 350°F / Gas mark 4.
Brown the chicken in a heavy based pan on both sides with a little olive oil, transfer to an oven proof dish, season with salt and pepper then cook in the oven for 45 minutes to 1 hour.
In the same pan, add 2 tablespoons of olive oil and fry the onion until soft, once softened, add the garlic and continue to stir.
Add the thyme and the tomatoes and bring to the boil
Add the beans and stir to combine.
Once the chicken is cooked, drain these on some kitchen towel
Zest the lemon over the chicken legs and squeeze over the juice.
Mix everything together and serve hot.
