Chicken, Celery, Walnut & Grape with Brennans Wholewheat Brown Bread

200g cooked chicken, torn into pieces
4 tbsp mayonnaise
2 spring onions, finely chopped
1 small stick of celery, finely chopped
25g walnuts, toasted and roughly chopped
25g butter, at room temperature (optional)
8 slices of Brennan’s Wholewheat Soda Bread
25g salad leaves
10 red seedless grapes, halved
sea salt and freshly ground black pepper
Mix the chicken in a medium bowl with the mayonnaise, spring onions, celery and walnuts. Season to taste with salt and pepper.
Spread the butter (if using) on one side of each bread slice.
Arrange the salad leaves on top of four of the slices.
Spoon the chicken mixture on top of the leaves and scatter the grape halves over.
Top each one with a slice of bread, buttered side down.
Either serve straight away or wrap up and keep chilled until ready to enjoy.
