Chicken pilaf
This chicken pilaf makes a great light dinner or filling lunch.

300g rice

5ml olive oil

1 or 2 chicken fillets

½ onion, chopped

2 tsp curry paste

120ml chicken stock

1 carrot, finely grated

Parsley to garnish

Cook the rice according to packet instructions.

Gently heat the oil in a frying pan and cook the chicken and onion together for about 5 minutes.

Stir in the curry paste, carrots and add the chicken stock.

Pour in the rice and bring to the boil before reducing the heat and leaving to simmer until the stock is gone. About 15 minutes.

When ready, drain off any excess stock, garnish with parsley and serve.
