Chickpea salad
A very hearty and energy giving salad that packs a flavourful punch and a medley of healthy ingredients.
 

400g can chickpeas, drained

2 tbsp olive oil

2 tomatoes, finely chopped

½ red onion, peeled and diced

1 sprig thyme

Juice of ½ lemon

In a pan, heat the oil and warm through the chickpeas.

Add in the rest of the ingredients and heat everything through stirring until the tomatoes start to break down.

Squeeze in the lemon juice, season with salt and pepper then serve.
