Chilli beef and pepper stir fry

This chilli beef and pepper stir fry is really flavousome and so quick to make.
400g fillet steak, sliced thinly
2 tbsp cornflour
3 tbsp groundnut oil
5cm ginger, peeled and grated
2-3 red chillies, seeds removed, finely chopped
2-3 cloves garlic, sliced finely
2 red peppers, cut into chunks
2 tsp dark soy sauce
2 tsp light soy sauce
2 tbsp hot vegetable stock
1 tsp sesame oil
Toss the beef slices in the cornflour and set aside.
Heat a wok over high heat and pour in the groundnut oil until its beginning to smoke. Toss in the garlic, ginger and red chilli and stir rapidly for a minute so they don’t burn. Then, add the beef and stir fry until browned. Remove and leave on a plate. Heat the remaining 1 tbsp of groundnut oil in a wok; add the red pepper and some ground black pepper and stir fry over a medium heat for about 4-5 minutes until lightly softened.
Return the beef to the wok and mix with the red peppers. Pour in the soy sauce, sesame oil and vegetable stock and heat until the sauce begins to bubble. Serve with rice or noodles.

If you don’t have groundnut oil, you can use sunflower or rapeseed oil instead. You can also add a mixture of different vegetables such as green beans or mangetout beans work really well.
