Really tasty and easy to make Chocolate and fruit Christmas cake.
350g prunes
250g raisins
125g currants
50g candied mixed peel
175g butter
175g dark brown muscovado sugar
175ml honey
125ml Tia Maria coffee liquor
2 oranges, juice and zest
1 tsp mixed spice
4 tbsp cocoa powder
3 eggs, beaten
150g plain flour
75g ground almonds
½ tsp baking powder
½ tsp bicarbonate soda
Preheat the oven to 150°C/300°F/Gas 2.
Line the sides and base of a 9 inch springform cake tin.
Place the dried fruit, butter, sugar, honey, Tia Maria, orange juice and zest, spice and cocoa powder into a large saucepan. Bring to the boil gently, then turn down the heat and simmer for 10 minutes. Take off the heat and leave to stand for 30 minutes.
Add the beaten eggs, flour, ground almonds, baking powder and bicarbonate soda. Stir together well, then pour the mix into the prepared cake tin. Bake for 1½ hours, the cake should be firm and shiny on top.
Place the cake on a wire rack and allow to cool, before removing the cake tin.
