Christmas Berry trifle

Stunning berry trifle which is sure to go down a treat.
400g mixed berries
360ml cream
250g lemon curd
30g icing sugar
170g strawberry jam
Juice of 1 orange
1 tsp vanilla extract
1 packet sponge cake fingers
Melt the orange juice and strawberry jam together in a small saucepan until the mixture becomes runny.
Whisk the cream with the icing sugar and vanilla extract. Fold in the lemon curd and set aside.
To assemble the trifle start with a layer of sponge cake fingers.
Brush some of the melted jam mixture over the top of the cake, smear some whipped lemon curd over this. Next, scatter a single layer of berries over this. Repeat the process until you fill the trifle bowl and finish with a layer of berries.
Leave to set in the fridge for a couple of hours.
