Chocolate chip blondies
Creamy brownie texture and tastes of a chocolate chip cookie, these gluten free blondies are a hit.

200g gluten free flour
¾ tsp salt
¼ tsp gluten free baking soda
1 tsp gluten free baking powder
145g butter, melted
400g light brown sugar
2 eggs
1 tbsp vanilla
180g semi-sweet chocolate chips
60g chopped nuts (optional - walnuts, pecans or macadamias)

Preheat the oven to 180°C / 350°F / Gas mark 4.

Line a baking tray with greaseproof paper and set aside.

Whisk together the flour, salt, baking powder and baking soda and set aside.

Stir together the melted butter and brown sugar until smooth.

Add the eggs and vanilla to the butter mixture and stir again.

Slowly add the dry ingredients to the wet ingredients and stir to combine.

Add the chocolate chips and nuts.

Pour the mixture into the baking tray and bake for 20-25 minutes.

They should be slightly browned along the edges and a bit gooey in the centre.

Cool in the tray then remove to wire rack to finish cooling before storing in an airtight container.
