Chocolate chip fudge brownies

These are incredibly moreish and incredibly simple to make.
150g cooking chocolate, roughly chopped
200g butter, chopped
3 eggs
2 egg yolks
200g caster sugar
115g plain flour
30g hot chocolate powder or cocoa powder
Handful chocolate chips
Preheat oven to 170°C/ 325°F/ Gas Mark 3. Line a 16 x 26cm baking tray with parchment paper.
Melt the butter and chocolate together in 30 second blasts in the microwave. Allow to cool.
Beat the eggs and egg yolks together in a bowl and pour in the cooled chocolate and butter mix. Give it a good mix to combine.
Pour in the sugar and sift in the flour. Give it a quick mix.
Pour into your baking tray and smooth down with the back of a spoon.
Sprinkle the chocolate chips on top.
Place in the oven for 40 minutes. Don't over-bake your brownies or they can dry out.
Allow to cool overnight before cutting into slices and serving.
