Chocolate fudge Easter cakes

140g soft butter

140g golden caster sugar

3 medium eggs

100g self-raising flour

25g cocoa , sifted

85g milk chocolate , broken

85g soft butter

140g icing sugar , sifted

2 x 35g packs of mini eggs/ chocolate eggs/ maltesers

Heat oven to fan 170°C/gas 5 and place bun cases in tray.

Add all the ingredients for the cake into a mixing bowl and beat for at least 2 minutes with an electric hand-whisk until smooth and fluffy.

Divide the mixture between the cases so they are two-thirds filled, then bake for 12-15 minutes until risen. Leave to cool on a wire rack.

For the icing, microwave the chocolate on high for 1 minute.

Cream the butter and sugar together, then mix in the melted chocolate.

Spread on the icing on the cakes or if you want to make the icing look like a nest, then using a small star nozzle pipe the icing in swirls and then place the mini eggs on top.
