Chocolate marshmallow cupcakes

480g butter, softened
450g chocolate, chopped into small pieces
6 eggs at room temperature
400g granulated sugar
250g all-purpose flour
Pinch salt
160g semi-sweet chocolate chips
Mini marshmallows
Preheat the oven to 160ºC / 350ºF / Gas Mark 4.
Line 24 muffin tins with pretty cupcake liners.
In a medium saucepan melt chocolate pieces and butter over low heat, remove and set aside.
In a large bowl beat eggs and granulated sugar together until frothy.
Add all-purpose flour and salt to egg mixture and whisk to combine.
Pour the melted chocolate/butter mixture into the egg mixture and mix until smooth.
Pour batter evenly into cupcake cups and top them evenly with chocolate chips.
Bake cupcakes 15 minutes, remove from oven and top each with three mini marshmallows.
Put cupcakes back into the oven and bake until marshmallows are melted
Remove from oven and allow cupcakes to cool.
