Chorizo, white fish and baby potatoes

Paprika chorizo with this haddock and potato one pot dish makes an effortless super supper.
1 tbsp olive oil, plus extra to serve
50g chorizo, peeled and thinly sliced
450g baby potatoes, sliced
Salt and pepper
4 tbsp white wine
250 (2) cod, haddock or thick white fish fillets, without skin
4-5 cherry tomatoes, halved
20g parsley, chopped
Crusty bread, to serve
Heat a large lidded frying pan, then add the oil.
Tip in the chorizo and fry for 2-4 minutes until the oils start to release.
Add in the potatoes and some pepper.
Splash over 3 tablespoons of white wine and cover the pan tightly.
Cook for 10-15 minutes until the potatoes are just tender. Stir them a bit halfway through.
Season the fish well with salt and pepper.
Give the potatoes another stir, add the cherry tomatoes and most of the chopped parsley to the pan, then lay the fish on top.
Splash over 1 tablespoon of white wine and put the lid on again.
Leave to cook for 5 minutes, or until the fish has turned white and is flaky when prodded in the middle.
Scatter the whole dish with a little more parsley and drizzle with more olive oil.
Serve straight away with crusty bread.
