Christmas cranberry sauce

450g fresh cranberries
1 large orange
75g caster sugar
1 tsp freshly grated root ginger or ½ level tsp ground ginger
4 cloves
4cm piece of cinnamon stick
2-3 tbsp port
Place the cranberries in a saucepan.
Peel off the zest of the orange using a potato peeler and cut it into very fine shreds.
Add these, with the juice of the orange, sugar, ginger and spices to the saucepan and mix.
Bring up to simmering point, stir well, and put a lid on the saucepan. Allow it all simmer very gently for about 5 minutes.
Remove the saucepan from the heat and stir in the port and allow to cool. Remove the cloves and cinnamon stick from the sauce before serving.
