Christmas rocky road

Rocky road with a seasonal twist.
250g dark chocolate, chopped
150g milk chocolate, chopped
175g butter
4 tbsp golden syrup
200g amaretti biscuits
150g brazil nuts
150g red glace cherries
125g mini marshmallows
1 tbsp icing sugar
Line a 20cm square tin.
Melt both types of chocolate with butter and golden syrup in a saucepan over a medium heat.
Place the amaretti biscuits into a bag and break into small pieces with a rolling pin.
Place the brazil nuts into a separate bag and bash with a rolling pin to different sizes.
Add the mini marshmallows, crushed biscuits, brazil nuts and glace cherries to the melted chocolate mix and stir to combine.
Scoop the mix into the prepared tin.
Leave to set in the fridge for 2 hours
Sprinkle with icing sugar and decorate as you wish.
