Cinnamon raisin scones
Tasty fresh baked scones with warming cinnamon.

470g plain flour

30g granulated sugar

1 tsp baking powder

1 tsp bicarbonate soda

1 tsp salt

1 lemon, zested

120g butter, cubed

170g walnuts, chopped

120g raisins

160ml buttermilk

Topping

30g granulated sugar

1 tbsp buttermilk

Preheat oven to 210°C/425°F/Gas 7.

Grease a baking sheet.

Mix together plain flour, sugar, baking powder, bicarbonate soda, salt and lemon zest.

Rub in butter with your fingertips.

Mix in walnuts and raisins, reserving a tablespoon of each for the topping.

Pour over the buttermilk, gather the dough into a ball and knead for 2 minutes on a liughtly floured surface.

Roll out to ¾ inch thick. With a sharp knife cut into triangles. Place the scones onto the greased baking sheet and brush the tops with the remaining 1 tbsp buttermik.

Sprinkle with the sugar and reserved nuts. Bake for about 15 minutes or until golden.

Serve with butter or jam.
