Citrus muffins

Citrus muffins
 
Packed with oast and citrus fruits, these low-fat muffins are a lovely snack or breakfast.
 

175g plain flour

25g porridge oats, plus extra for sprinkling

175g light soft brown sugar

1 tsp baking powder

½ tsp bicarbonate of soda

Zest and juice 1 orange

1 tbsp sunflower oil

150g pot plain yogurt

1 large egg

9 tsp chunky citrus jam, such as marmalade or other favourite

Preheat the oven to 200°C / 400°F / Gas mark 6.

Line a muffin tin with 9 paper cases. In a bowl, combine the flour, oats, sugar, baking powder and bicarbonate of soda.

Whisk the orange zest and juice, oil, yoghurt and egg together with a fork, then lightly stir the mixtures together until just combined.

Spoon 1 tablespoon of the mixture into each muffin case and top with 1 teaspoon of jam, then cover with the remaining muffin mix.

Bake for 15-20 minutes until cooked through and golden, then leave to cool slightly.
