Courgette and yoghurt dip

Lovely cooling yoghurt dip which is quick to prepare.
2 tbsp olive oil
2 courgettes, grated
500ml natural yoghurt
2 tbsp walnuts, chopped
1 tbsp flat-leaf parsley, chopped
Salt and pepper
Fry the courgettes in the olive oil for 5 minutes over a medium heat.
Remove from the heat and allow to cool.
Mix the courgettes and walnuts into the yoghurt.
Stir in the chopped parsley and season to taste, serve.
