Creamed spinach
This smooth and creamy spinach dish goes perfectly with any kind of meat 
 

1 kg spinach

1 large knob butter

1 heaped tbsp full-fat crème fraîche

2 tbsp olive oil

1 clove garlic, crushed

Freshly grated nutmeg

Coarse sea salt and black pepper to season

Thoroughly wash the spinach then drain in a colander.

Put the spinach in a large pan and place it over high heat. Add the butter. Be careful not to let it smoke or burn.

When it’s melted, put the spinach in the pan, a few handfuls at a time. This will cause them to sputter and sizzle, which is perfectly normal. Stir well until all the leaves have collapsed.

With a wooden spoon, press the spinach against one side of the pan to remove the excess water.

Place the spinach in a blender then add the crème fraîche, olive oil, garlic and a dash of nutmeg. Season with coarse sea salt and black pepper. Blend until you get a smooth purée. Taste and add more seasoning if necessary.

Only heat up the creamed spinach before serving.
