Creamy spinach and potato casserole

A delicious side dish for your family!
250g fresh spinach
1 onion, diced
1kg potatoes
250ml Avonmore Whole Super Milk
250ml cream
2 eggs
150g grated mozzarella
1/4 tsp grated nutmeg
1/2 tsp paprika
Heat the oven to 170°C/325°F/Gas 3. Grease a shallow baking dish.
In a large saucepan, saute the onion with a bit of olive oil until translucent. Add spinach and cook on a medium heat until the leaves are wilted and most of the water is evaporated.
Transfer to a chopping board and roughly chop.
In a large mixing bowl, combine Avonmore Super Milk, eggs, cream, nutmeg, paprika, salt and pepper. Set aside
Peel and slice the potatoes as thinly as possible (you can use a mandoline), and place half in the baking dish. Spread the spinach over the potatoes, scatter with half the cheese, then layer the remaining potatoes on top. Pour the egg mixture over the potatoes and spinach.
Top with the remaining cheese and bake for about one hour, until golden brown and cooked through.
