Crispy garlic vegetables with herbs

These herby Mediterranean-style vegetables taste so good and they are low in fat.
4 large potatoes, thinly sliced
2 carrots, sliced lengthwise and thinly
3 tbsp olive oil
2 garlic cloves, sliced
1 tbsp rosemary needles
1 tbsp thyme
Heat the grill to medium and simmer the potatoes and carrots in salted water for 3 minutes.
Drain well, tip into a shallow baking tray, toss with the oil, garlic, rosemary, thyme salt and pepper.
Spread out in one layer and grill for 10-15 minutes or until crisp and golden.
